Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 large carrots peeled and chopped
  • 2 sweet potatoes peeled and cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups AIP-friendly chicken broth no added sugar or preservatives
  • 1 tsp turmeric
  • 1 tsp ginger powder
  • Salt and pepper to taste

Method
 

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chopped carrots, sweet potatoes, onion, and garlic.
  3. Pour the chicken broth over the ingredients in the crockpot.
  4. Add turmeric, ginger, salt, and pepper, then stir to combine.
  5. Cover and cook on low for 6-8 hours, or until the chicken is fully cooked and vegetables are tender.
  6. Remove the chicken, shred it with a fork, and return it to the stew.
  7. Stir well and serve hot.
