Ingredients
  

  • 1 lb ground grass-fed beef or turkey
  • 1 small zucchini finely grated
  • 1 small carrot finely grated
  • 1/2 cup chopped onion optional, for AIP reintroductions
  • 1/4 cup coconut flour
  • 1/4 cup homemade bone broth or water
  • 1 egg optional for strict AIP, or substitute with flax egg if desired
  • 1 tbsp dried oregano
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper optional for AIP reintroductions
  • 1/4 cup coconut oil for greasing

Method
 

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a loaf pan or baking dish with coconut oil.
  2. Prepare the Vegetables: Grate the zucchini and carrot into fine shreds using a box grater or food processor. If you’re using onions, finely chop them as well.
  3. Mix the Ingredients: In a large mixing bowl, combine the ground meat, grated zucchini, grated carrot, onion (if using), coconut flour, bone broth, egg (or flax egg), oregano, garlic powder, onion powder, salt, and pepper. Use your hands or a spoon to mix everything thoroughly until well combined.
  4. Shape the Meatloaf: Transfer the meat mixture into the prepared loaf pan or shape it into a loaf and place it on a baking sheet.
  5. Bake: Bake for 45–55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C), checking with a meat thermometer for accuracy.
  6. Rest: Once cooked, remove from the oven and let it rest for 10 minutes before slicing. This helps retain moisture and makes slicing easier.

Notes

  • If you're following a strict AIP diet and cannot use eggs, substitute with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
