Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Equipment

  • Mixing bowls (2)
  • Whisk
  • Measuring cups and spoons
  • Non-stick skillet or griddle
  • Spatula

Method

  1. In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy—avoid overmixing.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  5. Pour about 1/4 cup of the batter onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface of the pancake. Flip the pancake and cook for another 1-2 minutes, until golden brown.
  6. Repeat with the remaining batter.
  7. Serve with your favorite toppings such as syrup, fresh fruit, or whipped cream.

Notes

  • Fluffier Pancakes: For extra fluff, let the batter rest for a couple of minutes before cooking.
  • Custom Toppings: Feel free to experiment with different toppings like fresh berries, maple syrup, or a sprinkle of powdered sugar.
  • Dietary Adjustments: You can substitute almond milk for dairy milk or use whole wheat flour for a healthier alternative.
  • Make Ahead: If you have leftovers, store them in an airtight container in the fridge for up to 3 days, or freeze them for longer storage. Reheat in the microwave or toaster oven for the best results.
