Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar or ½ cup white + ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 1 ½ cups chopped peaches fresh or canned, drained
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Optional: ½ cup chopped nuts or a simple glaze topping

Method
 

  1. reheat oven to 350°F (175°C). Grease a 9x5 loaf pan.
  2. Prepare peaches – peel, chop, and set aside (or drain canned peaches well).
  3. Mix dry ingredients – in a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Mix wet ingredients – in another bowl, beat eggs, sugar, oil, and vanilla until smooth.
  5. Combine – gently stir dry mixture into wet mixture until just combined. Fold in peaches (and nuts if using).
  6. Bake – pour batter into loaf pan. Bake for 50–60 minutes, or until a toothpick comes out clean.
  7. Cool & serve – let the bread cool for 10 minutes in the pan, then transfer to a wire rack. Slice and enjoy!

  • Fresh peaches give the best flavor, but well-drained canned peaches work year-round.
