reheat oven to 350°F (175°C). Grease a 9x5 loaf pan.
Prepare peaches – peel, chop, and set aside (or drain canned peaches well).
Mix dry ingredients – in a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix wet ingredients – in another bowl, beat eggs, sugar, oil, and vanilla until smooth.
Combine – gently stir dry mixture into wet mixture until just combined. Fold in peaches (and nuts if using).
Bake – pour batter into loaf pan. Bake for 50–60 minutes, or until a toothpick comes out clean.
Cool & serve – let the bread cool for 10 minutes in the pan, then transfer to a wire rack. Slice and enjoy!
