Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line with parchment paper.

  2. Wash, hull, and dice the strawberries. Pat dry with paper towels to remove excess moisture.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, beat eggs, sugar, oil (or butter), and vanilla until smooth.
  5. Gradually add the dry mixture into the wet ingredients, stirring gently until combined.
  6. Fold in the strawberries (and nuts/chocolate chips if using).
  7. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
