  • 1 tsp dried thyme
  • 1 cup beef broth for drippings or jus

Method
 

  1. Preheat Oven: Set your oven to 450°F (230°C).
  2. Prepare Roast: Pat the beef dry with paper towels. Rub it all over with olive oil.
  3. Season: Mix salt, pepper, garlic powder, onion powder, rosemary, and thyme. Rub this seasoning blend evenly over the roast.
  4. Sear (Optional): For extra flavor, sear the roast on all sides in a hot skillet before roasting.
  5. Roast: Place the beef on a rack in the roasting pan and cook at 450°F for 15 minutes. Then reduce the oven temperature to 325°F (165°C) and continue roasting for about 60–90 minutes, or until internal temperature reaches 135°F for medium-rare.
  6. Rest: Remove from the oven, tent loosely with foil, and let rest for 15–20 minutes before slicing.
  7. Make Jus: Pour the drippings into a small saucepan with the beef broth. Simmer for 5 minutes and serve with the roast.
