Preheat oven: Heat to 200°C (fan).
Prep rolls: Slice rolls lengthwise, keeping one side attached. Brush the inside with olive oil.
Layer meats: Fill each roll with salami, pepperoni, and ham.
Add cheese & veggies: Top with provolone, shredded mozzarella, tomato, onion, and banana peppers. Season with Italian seasoning, salt, and pepper.
Bake: Place on a baking tray and bake for 10–12 minutes, or until the cheese is melted and the bread is lightly toasted.
Serve: Remove from the oven, press the sandwich closed, slice, and enjoy warm.
