Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar or granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 –3 ripe bananas mashed
  • 1/4 cup milk
  • Optional: 1/2 cup chopped walnuts pecans, or chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
  5. Gradually add the dry ingredients to the banana mixture, alternating with milk, mixing just until combined.
  6. Fold in optional nuts or chocolate chips if desired.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

  • Overripe bananas give the best flavor and sweetness.
  • You can swap butter for oil for a slightly denser, moister texture.
