  • Juice of 1 lime
  • 1 tsp adobo seasoning
  • Salt and pepper to taste
  • For the Fried Plantains:
  • 2 ripe plantains
  • Vegetable oil for frying
  • For the Optional Salad:
  • Lettuce
  • Tomatoes
  • Cucumbers
  • Olive oil

Equipment

  • Large pot for cooking rice
  • Medium pot for cooking beans
  • Skillet or frying pan for cooking meat and plantains

Method
 

  1. Cook the Rice & Beans: Cook the rice in water with a pinch of salt. In another pot, cook the beans with onions, garlic, and seasoning.
