Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, whisk together flour, baking powder, salt, and sugar (if using).
- Add cold butter to the flour mixture. Use a pastry cutter or fork to cut it in until it resembles coarse crumbs.
- Pour in the coconut milk gradually, mixing gently until a soft dough forms. Avoid overworking the dough to keep it tender.
- Turn dough out onto a lightly floured surface. Roll to about ½ inch thick and use a biscuit cutter or glass to cut rounds.
- Place rounds on the baking sheet. Bake for 15–18 minutes, or until lightly golden. Remove and cool on a wire rack.
Notes
Vegan Option: Swap butter with vegan margarine and use almond or oat milk.
Freezing Tip: Freeze baked Johnny Cakes for up to 3 months; reheat at 300°F until warm.
Texture Tip: The less you handle the dough, the softer the Johnny Cakes will be!
Flavor Variation: Add shredded coconut or cinnamon for a sweeter version.
