Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 4 tbsp cold unsalted butter cubed
  • 1 cup coconut milk or regular milk
  • 1 tbsp sugar optional, for a hint of sweetness
  • LSI Keywords: basic baking ingredients fresh ingredients for baking, essential cake ingredients.

Equipment

  • Here’s what you’ll need to make Belizean Johnny Cakes at home:
  • Mixing bowls (2)
  • Measuring cups and spoons
  • Pastry cutter or fork
  • Rolling Pin
  • Baking sheet
  • Oven
  • Kitchen towel or cling film (for resting dough)

Method

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together flour, baking powder, salt, and sugar (if using).
  3. Add cold butter to the flour mixture. Use a pastry cutter or fork to cut it in until it resembles coarse crumbs.
  4. Pour in the coconut milk gradually, mixing gently until a soft dough forms. Avoid overworking the dough to keep it tender.
  5. Turn dough out onto a lightly floured surface. Roll to about ½ inch thick and use a biscuit cutter or glass to cut rounds.
  6. Place rounds on the baking sheet. Bake for 15–18 minutes, or until lightly golden. Remove and cool on a wire rack.

Notes

Vegan Option: Swap butter with vegan margarine and use almond or oat milk.
Freezing Tip: Freeze baked Johnny Cakes for up to 3 months; reheat at 300°F until warm.
Texture Tip: The less you handle the dough, the softer the Johnny Cakes will be!
Flavor Variation: Add shredded coconut or cinnamon for a sweeter version.
