Ingredients

  • 2 cups of fresh or frozen blueberries
  • 1 cup of granulated sugar
  • 1 cup of water
  • 2 tablespoons of fresh lemon juice
  • 1 teaspoon of vanilla extract optional

Equipment

  • Medium-sized saucepan
  • Potato masher or spoon (for mashing the blueberries)
  • Fine mesh sieve (optional, for straining)
  • Stirring Spoon
  • Airtight container or jar (for storing)

Method

  1. Combine Ingredients: In a medium-sized saucepan, combine the blueberries, sugar, water, and lemon juice. Stir to combine.
  2. Simmer: Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Mash the Blueberries: Once the mixture begins to simmer, reduce the heat to low. Use a potato masher or the back of a spoon to mash the blueberries, releasing their juices and flavor.
  4. Strain (Optional): For a smoother syrup, strain the mixture through a fine mesh sieve to remove the blueberry skins. Skip this step if you prefer a textured syrup.
  5. Reduce and Thicken: Return the syrup to the pot and continue simmering for another 5-10 minutes, or until it reaches your desired consistency.
  6. Add Vanilla Extract: Once thickened, remove the syrup from the heat and stir in the vanilla extract (if using).
  7. Cool and Store: Allow the syrup to cool to room temperature, then transfer it to an airtight container or jar for storage. Store in the refrigerator for up to two weeks.

Notes

  • Consistency: If you prefer a thicker syrup, let it simmer a little longer. If it becomes too thick after refrigeration, simply reheat and add a bit of water to loosen it up.
  • Variations: Feel free to customize the syrup by adding spices like cinnamon or ginger, or substitute sugar with honey for a natural sweetener.
  • Serving Suggestions: Blueberry syrup is perfect for pancakes, waffles, French toast, ice cream, yogurt, or even as a topping for desserts like cheesecake.
  • Storage: This syrup can be stored in an airtight container in the refrigerator for up to two weeks. For long-term storage, freeze the syrup in ice cube trays for easy portioning.
