Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 lb ground beef
  • 1/2 lb ground pork optional
  • 1/4 lb chicken liver finely chopped (optional)
  • 1 small onion finely chopped
  • 1/2 green bell pepper finely chopped
  • 2 celery stalks finely chopped
  • 3 cloves garlic minced
  • 2 tbsp vegetable oil or bacon grease
  • 1 tsp Cajun seasoning
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper adjust to taste
  • Salt and black pepper to taste
  • 2 green onions sliced (for garnish)
  • Fresh parsley chopped (optional, for garnish)

Equipment

  • Medium saucepan with lid (for cooking rice)
  • Large skillet or frying pan

Method
 

  1. Cook the Rice: Bring 2 cups of chicken broth to a boil in a medium saucepan. Add rice, cover, reduce heat to low, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed. Fluff with a fork and set aside.

  2. Cook the Meat: Heat oil or bacon grease in a large skillet over medium heat. Add chopped chicken liver (if using) and cook until browned. Add ground beef and pork; cook until browned and cooked through. Drain excess fat if necessary.
  3. Sauté Vegetables: Add onion, bell pepper, celery, and garlic to the skillet. Cook for about 5 minutes until vegetables soften.

  4. Add Spices: Stir in Cajun seasoning, thyme, paprika, cayenne, salt, and pepper. Mix well to combine.
  5. Combine Rice and Meat Mixture: Add cooked rice to the skillet. Stir to evenly combine. Cook on low for 3-5 minutes to allow flavors to meld.
  6. Garnish and Serve: Sprinkle with sliced green onions and chopped parsley if desired. Serve hot.
