Method
- Grease the bread pan and select the “quick bread” cycle on your bread machine.
- Shred zucchini and squeeze out extra water.
- Mix eggs, sugar, oil, milk, and vanilla in a bowl.
- Add wet ingredients to the bread pan, then top with dry ingredients and zucchini. Add optional nuts or chocolate chips.
- Start the bread machine and bake.
- Let bread cool on a wire rack for 20–30 minutes before slicing.

- Make sure to squeeze excess water from zucchini to avoid soggy bread.
