Ingredients

  • 1 cup 225g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 1/2 cup 100g brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups 315g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • For the Cheesecake Filling:
  • 8 oz 225g cream cheese, softened
  • 1/4 cup 50g granulated sugar
  • 1 tsp vanilla extract
  • For the Caramel Drizzle:
  • 1/2 cup 120ml caramel sauce (store-bought or homemade)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until combined.
  4. In a small bowl, beat together cream cheese, sugar, and vanilla extract until smooth.
  5. Scoop about 1 tablespoon of cookie dough and flatten slightly. Place 1 teaspoon of cheesecake filling in the center, then fold cookie dough around it to fully encase the filling.
  6. Place stuffed cookies on prepared baking sheets, spacing about 2 inches apart. Bake 12–15 minutes or until edges are lightly golden.
  7. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack.
  8. Drizzle caramel sauce over cooled cookies before serving.
