- Prepare the Cauliflower: Cut the cauliflower into florets or rice it using a food processor. If using florets, steam or sauté them until tender, or simply cook them alongside the beef in the skillet for a quicker method.
- Cook the Ground Beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula. Season with salt, pepper, and paprika. Continue cooking until the beef is fully cooked through.
- Sauté the Vegetables: Add the chopped onions and garlic to the skillet. Cook for about 3–4 minutes until softened and fragrant. If using bell peppers or other vegetables, add them now and cook for another 2–3 minutes.
- Combine with Cauliflower: Add the cooked cauliflower to the skillet with the beef mixture. Stir well to combine and cook for an additional 5–7 minutes to allow the flavors to meld.
- Serve and Garnish: Once everything is well mixed and heated through, serve the dish hot. Garnish with fresh herbs or a sprinkle of cheese, if desired.
Notes
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3–4 days. It can also be frozen for up to 3 months.
Vegetarian Options: Substitute ground beef with lentils, mushrooms, or a plant-based ground meat alternative for a vegetarian or vegan version.
Make it Spicy: For a spicy kick, add red pepper flakes, chopped jalapeños, or a dash of hot sauce.
Customize Vegetables: Feel free to add other veggies such as zucchini, spinach, or carrots to increase the nutritional value and add extra flavor.
