  • 500 g chicken boneless, skinless thighs or breasts, cut into bite-sized pieces
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 medium carrots sliced
  • 1 bell pepper sliced
  • 100 g button mushrooms sliced
  • 4 cups chicken broth low-sodium
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch for thickening
  • Chili flakes optional, to taste
  • Salt and pepper to taste
  • Green onions for garnish, optional

Method
 

  1. Prepare the Chicken: Season the chicken pieces with a little salt and pepper.
  2. Sauté Aromatics: Heat sesame oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
  3. Cook the Chicken: Add the chicken to the pot. Cook for 5-7 minutes, stirring occasionally, until browned on all sides.
  4. Add Vegetables: Stir in the carrots, bell pepper, and mushrooms. Cook for another 3-4 minutes until the vegetables start to soften.
  5. Simmer the Broth: Pour in the chicken broth and soy sauce. Bring to a simmer, then cover and cook for 10-15 minutes until the chicken is fully cooked and the vegetables are tender.
  6. Thicken the Broth: In a small bowl, mix the cornstarch with a little water to form a slurry. Gradually pour it into the pot while stirring. Let the mixture cook for 2-3 minutes until thickened.
  7. Season and Serve: Taste and adjust seasoning with salt, pepper, or chili flakes if desired. Garnish with green onions before serving.

  • Substitutions: If you prefer, you can swap the chicken for pork or beef, or even make it vegetarian by using tofu.
