Method
 

  1. Prepare the Meat: Mix the ground meat with garlic, oregano, cumin, vinegar, salt, and pepper. Let sit for 30 minutes.
  2. Shape the Patties: Form the meat into 4-6 patties.
  3. Cook the Patties: Grill or pan-fry the patties for 4-5 minutes on each side until cooked through.
  4. Prepare the Toppings: Slice the tomatoes, onions, and shred the cabbage and lettuce. Marinate the onions in vinegar for 10 minutes.
  5. Toast the Buns: Lightly toast the buns on the grill or in a pan.
  6. Assemble the Chimi: Place a patty on each bun, add toppings (lettuce, cabbage, tomatoes, onions), and drizzle with condiments.
  7. Serve: Enjoy immediately with French fries or tostones.
