Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour and baking soda, and set aside.
Cream Butter and Sugars: In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
Add Eggs and Vanilla: Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix. Fold in the chocolate chips (and nuts if using).
Scoop and Shape Dough: Use a cookie scoop or tablespoon to portion out the dough, rolling into balls. Place them 2 inches apart on the prepared baking sheets.
Bake the Cookies: Bake for 9-11 minutes, or until edges are golden and centers are slightly soft.
Cool and Serve: Allow cookies to cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
