Ingredients
  

  • 2 ripe bananas mashed
  • 2 large eggs
  • 1 ½ cups all-purpose flour or gluten-free alternative
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon optional
  • 1 tablespoon sugar or honey optional
  • 1 teaspoon vanilla extract
  • 1 ¼ cups milk dairy or non-dairy
  • ¼ cup melted butter or coconut oil
  • Pinch of salt

Method
 

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, mash the bananas until smooth.
  3. Add eggs, milk, vanilla, and melted butter. Whisk until combined.
  4. In a separate bowl, mix flour, baking powder, cinnamon, sugar, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring just until combined. Do not overmix.
  6. Lightly grease waffle iron and pour in batter. Close lid and cook until steam subsides and waffles are golden brown.
  7. Remove and serve immediately with desired toppings.

Notes

Make it vegan: Use flax eggs (1 tbsp flax + 2.5 tbsp water) and plant-based milk.
For crispier waffles, let them rest on a wire rack instead of stacking.
Add-ins: Mini chocolate chips, chopped nuts, or blueberries work wonderfully.
Storage: Waffles freeze well. Reheat in toaster for crispiness.
