Method
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, mash the bananas until smooth.
- Add eggs, milk, vanilla, and melted butter. Whisk until combined.
- In a separate bowl, mix flour, baking powder, cinnamon, sugar, and salt.
- Gradually add dry ingredients to wet mixture, stirring just until combined. Do not overmix.
- Lightly grease waffle iron and pour in batter. Close lid and cook until steam subsides and waffles are golden brown.
- Remove and serve immediately with desired toppings.
Notes
Make it vegan: Use flax eggs (1 tbsp flax + 2.5 tbsp water) and plant-based milk.
For crispier waffles, let them rest on a wire rack instead of stacking.
Add-ins: Mini chocolate chips, chopped nuts, or blueberries work wonderfully.
Storage: Waffles freeze well. Reheat in toaster for crispiness.
