  • 4-5 medium cucumbers firm and fresh
  • 4-5 garlic cloves peeled
  • 4-6 fresh dill sprigs
  • 2 cups white vinegar
  • 1 cup water
  • 2 tablespoons kosher salt
  • 1 tablespoon mustard seeds optional
  • 1 tablespoon black peppercorns optional
  • 1 teaspoon red pepper flakes optional

  • 2 cups white vinegar
  • 1 cup water
  • 2 tablespoons kosher salt

  • 1 teaspoon red pepper flakes (optional)

Method
 

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly. Slice them into spears or keep them whole, depending on your preference.
  2. Make the Brine: In a saucepan, combine vinegar, water, and kosher salt. Heat over medium heat, stirring until the salt dissolves. Remove from heat and let cool to room temperature.
  3. Pack the Jars: Pack the cucumbers, garlic cloves, and dill into your glass jars. Add mustard seeds, peppercorns, and red pepper flakes if desired.
  4. Add the Brine: Pour the cooled brine over the cucumbers in the jars, making sure they are fully submerged. Leave about 1 inch of space at the top.
  5. Seal and Refrigerate: Seal the jars tightly and refrigerate. Let them sit for 24-48 hours for the flavors to develop. The longer they sit, the more flavorful they become.

Notes

  • If you like a spicier pickle, feel free to add more red pepper flakes or even a small sliced jalapeƱo.
  • For a sweeter variation, you can add a tablespoon of sugar to the brine.
  • These pickles can last up to 3-4 weeks in the fridge. Enjoy them as a snack, or pair them with sandwiches and burgers for the perfect crunch!
