  • 1 tsp vanilla extract

  • ½ cup brown sugar
  • ¼ cup chopped walnuts or pecans optional
  • 2 tbsp all-purpose flour
  • 3 tbsp unsalted butter cold and cubed

Method
 

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease and flour your baking pan or line it with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and instant coffee granules.
  3. Combine wet ingredients: In another bowl, mix buttermilk, melted butter, eggs, and vanilla extract until smooth.
  4. Make the batter: Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Prepare the topping: In a small bowl, combine brown sugar, chopped nuts, and flour. Cut in cold butter using a pastry cutter or your fingers until crumbly.
  6. Assemble and bake: Pour batter into the prepared pan and evenly sprinkle the topping over the batter. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
