Method

  2. Prepare the Alfredo Sauce: In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add Cream Cheese: Reduce the heat to low and add the softened cream cheese to the skillet. Stir continuously until the cream cheese fully melts into the butter, creating a smooth mixture.
  4. Incorporate Milk: Gradually pour in the milk (or half-and-half), stirring constantly to ensure the sauce becomes smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water to achieve your desired consistency.
  5. Add Parmesan: Stir in the grated Parmesan cheese and continue to cook the sauce over low heat, allowing the cheese to melt into the sauce. Season with salt and pepper to taste.
  6. Toss the Pasta: Add the cooked pasta to the skillet and toss to coat the pasta evenly with the creamy Alfredo sauce. If the sauce is too thick, add a little more pasta water to loosen it.
  7. Serve: Plate the creamy Alfredo pasta and garnish with fresh parsley or a sprinkle of additional Parmesan cheese. For a spicy kick, add red pepper flakes.

  • Substitutions: You can substitute the cream cheese with reduced-fat cream cheese or even Greek yogurt for a lighter version. Whole wheat pasta or spiralized vegetables like zucchini can also be used for a healthier option.
