Ingredients

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar for topping

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Baking Sheets
  • Parchment paper or silicone baking mat
  • Measuring cups and spoons
  • Oven
  • Broiler (for caramelizing the sugar)
  • Cooling rack

Method

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Chill the Dough: Cover the dough and refrigerate it for at least 30 minutes. This helps prevent the cookies from spreading too much while baking.
  5. Shape the Cookies: Once the dough is chilled, scoop tablespoon-sized portions of dough and roll them into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Top with Sugar: Sprinkle a generous amount of granulated sugar over the top of each cookie. This will create the caramelized "brulee" topping when baked.
  7. Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still soft.
  8. Caramelize the Sugar: After baking, turn on your broiler. Place the baking sheet under the broiler for 1-2 minutes to lightly caramelize the sugar on top of the cookies. Watch closely to prevent burning.
  9. Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Vanilla Extract: For the best flavor, use high-quality vanilla extract or vanilla beans.
  • Chill the Dough: Chilling the dough is crucial to getting the right texture and preventing the cookies from spreading too much during baking.
  • Caramelization: Be careful when using the broiler, as the sugar can burn quickly. Keep a close eye on it while caramelizing.
  • Storage: Store these cookies in an airtight container at room temperature for up to 1 week. For longer storage, freeze the cookies for up to 3 months.
  • Customization: You can add chocolate chips, toffee bits, or a sprinkle of cinnamon to the dough for an extra twist on the classic recipe.
