Ingredients

  • 1 lb Velveeta cheese cubed
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup heavy cream or whole milk add more as needed for consistency
  • 1 tbsp chili powder
  • 1 tsp cumin powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup salsa or 1/2 cup diced tomatoes drained
  • 1-2 tbsp diced jalapeños optional, for heat
  • Salt and pepper to taste

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • Knife (for chopping tomatoes or other fresh ingredients)
  • Cutting board
  • Measuring spoons (for spices)
  • Serving dish or bowl (for serving)

Method

  1. Prepare the Cheese Mixture: In a medium saucepan, combine the cubed Velveeta cheese, shredded cheddar cheese, and heavy cream (or whole milk). Heat over medium heat, stirring constantly until the cheese melts and the mixture becomes smooth and creamy.
  2. Add Spices and Salsa: Stir in the chili powder, cumin, garlic powder, paprika, and salt and pepper to taste. Add the salsa or diced tomatoes and mix well to incorporate the fresh flavor. If you prefer a spicier queso, add the diced jalapeños or a bit of hot sauce.
  3. Simmer: Reduce the heat and let the queso simmer for a few minutes, stirring occasionally. If the queso is too thick, add more milk or cream to adjust the consistency to your liking.
  4. Serve: Once the queso is smooth, creamy, and heated through, pour it into a serving dish. Serve immediately with tortilla chips, fresh veggies, or over nachos, tacos, or baked potatoes.

Notes

  • Storage: Leftover queso can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, use a stovetop or microwave, adding a little milk or cream to restore the creamy texture.
  • Customization: Feel free to add ground beef, chorizo, or shredded chicken for a meatier queso. For a vegetarian version, add roasted vegetables like bell peppers, corn, or black beans.
  • Spice Level: Adjust the heat level by adding more jalapeños, hot sauce, or chipotle peppers depending on your preference.
  • Consistency: If your queso thickens after cooling, just stir in a little extra milk or cream when reheating to return it to a smooth, pourable consistency.
