Ingredients

  • 50 ml 1.5 oz Malibu Coconut Rum
  • 1/2 lime cut into wedges
  • 8 –10 fresh mint leaves
  • 1 –2 teaspoons sugar white or cane
  • Crushed ice or ice cubes
  • Soda water to top
  • Optional garnish: lime wheel mint sprig

Equipment

  • Highball or Collins glass
  • Muddler (or back of a spoon)
  • Cocktail shaker (optional)
  • Jigger or measuring tool
  • Bar spoon or stirrer
  • Knife and cutting board
  • Straw (optional)

Method

  1. Muddle the Base: In your glass, muddle the lime wedges, mint leaves, and sugar gently just enough to release oils and juice, not shred the mint.
  2. Add the Rum: Pour in the Malibu Coconut Rum over the muddled mix.
  3. Fill with Ice: Add crushed ice or ice cubes to fill the glass almost to the top.
  4. Top with Soda: Pour soda water over the mix until the glass is full.
  5. Stir Gently: Use a bar spoon to give it a gentle stir, blending everything without killing the fizz.
  6. Garnish & Serve: Add a lime wheel and a sprig of mint on top. Serve with a straw if desired.

Notes

  • No Malibu? Substitute with any coconut-flavored rum.
  • Make it sweeter by adding simple syrup instead of sugar for quicker dissolving.
  • Mocktail version: Replace rum with coconut water and add extra lime for balance.
  • Freshness tip: Always use fresh lime and mint for the best flavor—avoid bottled lime juice.
  • Flavor boost: Add a splash of pineapple juice or muddled strawberries for a fruity twist.
