Ingredients
  

  • 2 boneless skinless chicken breasts
  • 8 oz of pasta fettuccine, penne, or spaghetti
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese freshly grated
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish, optional

Method
 

  1. Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-6 minutes on each side or until fully cooked. Remove from heat and slice into thin strips.
  2. Cook the Pasta: Boil water in a large pot, add salt, and cook the pasta according to package instructions (about 8-10 minutes). Drain and set aside, reserving some pasta water for later.
  3. Make the Sauce: In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in chicken broth, heavy cream, and parmesan cheese. Simmer for 3-4 minutes until the sauce thickens. Add more pasta water if the sauce gets too thick.
  4. Combine: Add the cooked pasta to the skillet and toss it in the creamy sauce. Add the sliced chicken on top and stir to coat everything in the sauce.
  5. Serve: Plate the pasta and chicken, and garnish with fresh parsley and extra parmesan cheese if desired
