Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3-4 garlic cloves minced
  • 1/2 onion finely chopped
  • 1 can 28 oz crushed tomatoes (or fresh tomatoes, diced)
  • 1-2 teaspoons red pepper flakes adjust to heat preference
  • 1/4 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish optional

Equipment

  • Large pan or skillet
  • Wooden spoon or spatula
  • Knife and chopping board
  • Measuring spoons and cups
  • Can opener (if using canned tomatoes)

Method

  1. Heat Olive Oil: In a large pan or skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, cooking until the garlic becomes fragrant and the onions are soft (about 3-4 minutes).
  2. Add Tomatoes: Stir in the crushed tomatoes and cook for 10-15 minutes, allowing the sauce to thicken and the flavors to concentrate.
  3. Spice It Up: Add red pepper flakes to the sauce, adjusting the quantity depending on your heat preference. Stir to incorporate.
  4. Add Wine and Seasonings: Pour in the white wine to deglaze the pan, scraping up any bits from the bottom. Add dried oregano, dried basil, salt, and pepper, and mix well.
  5. Simmer: Reduce the heat to low and simmer for another 15-20 minutes, stirring occasionally. Taste the sauce and adjust seasonings as needed.
  6. Serve: Once the sauce has thickened to your desired consistency, serve it over pasta, seafood, or vegetables. Garnish with fresh herbs if desired.

Notes

  • Heat Level: Adjust the amount of red pepper flakes based on your spice tolerance. Start with 1 teaspoon and taste as you go.
  • Wine Substitute: If you prefer not to use wine, substitute with vegetable broth or lemon juice for acidity.
  • Make Ahead: This sauce can be made in advance and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
  • Seafood Options: Add shrimp, lobster, or clams to the sauce for a classic seafood Fra Diavolo. Cook the seafood in the sauce until fully cooked.
