Ingredients
  

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted
  • For the Cheesecake Filling:
  • 3 packages 8 oz each cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • For the Chocolate Ganache:
  • 6 oz Godiva chocolate chopped
  • 1/2 cup heavy cream

Method
 

  1. Step 1: Preparing the Crust / Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
  2. Step 2: Making the Cheesecake Filling/ Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream. Pour over the cooled crust.
  3. Step 3: Preparing the Chocolate Ganache / Place chopped Godiva chocolate in a heatproof bowl. Heat cream in a saucepan until simmering, then pour it over the chocolate. Let it sit for 1-2 minutes, then stir until smooth.
  4. Step 4: Assembling the Cheesecake/ Pour the cheesecake filling over the crust. Drizzle the ganache on top and swirl with a knife.
  5. Step 5: Baking the Cheesecake/ Bake at 325°F (163°C) for 55-65 minutes. The edges should set, and the center should be slightly jiggly. Turn off the oven and cool the cheesecake for 1 hour. Then refrigerate for at least 4-6 hours or overnight.
