Ingredients

  • 2 striped bass fillets about 6 oz each
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 2 garlic cloves minced
  • 2 teaspoons fresh thyme chopped
  • 1 teaspoon fresh rosemary chopped
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh herbs optional, for garnish

Equipment

  • Grill or grill pan
  • Tongs
  • Basting brush
  • Cooking thermometer (optional)
  • Aluminum foil or grill basket (optional)
  • Sharp knife
  • Cutting board

Method

  1. Preheat Grill: Preheat your grill to medium-high heat (about 400°F). Clean and oil the grill grates to prevent sticking.
  2. Prepare Marinade: In a small bowl, mix olive oil, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, and pepper.
  3. Marinate Fish: Coat the striped bass fillets with the marinade. Allow them to marinate for at least 15-30 minutes.
  4. Grill Fish: Place the fillets on the preheated grill, skin-side down (if skin is on). Grill for 3-4 minutes on each side, or until the fish reaches an internal temperature of 145°F and easily flakes with a fork.

Notes

  • For a Crispy Skin: If you’re grilling with skin on, leave the skin side down for the first 3-4 minutes to get it crispy.
  • Grilling Tips: If you’re worried about the fish sticking, consider using a grill basket or wrapping the fillets in aluminum foil for easier handling.
  • Serving Suggestion: This grilled striped bass pairs wonderfully with a side of roasted vegetables, a light quinoa salad, or a crisp green salad.
