Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan or loaf pan.
In a large bowl, combine the whole wheat flour, almond flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In another bowl, whisk the eggs, honey (or maple syrup), melted coconut oil, vanilla extract, and applesauce.
Add the grated apples to the wet ingredients and mix well.
Gradually fold the wet ingredients into the dry ingredients until just combined.
If desired, fold in chopped walnuts or almonds for an added crunch.
Pour the batter into the prepared pan and spread it out evenly.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
