  • 2 medium apples grated
  • 1 ½ cups whole wheat flour

  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • 1/4 cup coconut oil melted (or olive oil)
  • 1 tsp vanilla extract
  • ¼ cup unsweetened applesauce
  • ¼ cup chopped walnuts or almonds optional
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan or loaf pan.

  2. In a large bowl, combine the whole wheat flour, almond flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

  4. Add the grated apples to the wet ingredients and mix well.
  5. Gradually fold the wet ingredients into the dry ingredients until just combined.

  7. Pour the batter into the prepared pan and spread it out evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
