Ingredients

  • 3 cups shredded HEB rotisserie chicken skin removed
  • ½ cup mayonnaise or Greek yogurt for a lighter option
  • 1 tablespoon Dijon mustard
  • 2 stalks celery finely chopped
  • ¼ cup red onion finely diced
  • ½ cup red grapes halved (optional)
  • ¼ cup chopped pecans or sliced almonds optional
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs parsley or dill, optional for garnish

Equipment

  • Large mixing bowl
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Fork (for shredding chicken)
  • Spoon or spatula (for mixing)

Method

  1. Prepare Chicken: Remove skin from the rotisserie chicken and shred 3 cups of meat using a fork or your hands. Add to a large bowl.
  2. Chop the Add-Ins: Finely dice celery, onion, and grapes (if using). Add to the bowl with the chicken.
  3. Mix the Dressing: In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  4. Combine Everything: Pour the dressing over the chicken mixture. Add nuts if using. Stir gently until everything is evenly coated.
  5. Chill (Optional): For best flavor, cover and refrigerate for at least 30 minutes before serving.
  6. Serve and Enjoy: Serve on a sandwich, in lettuce wraps, over a green salad, or with crackers.

Notes

  • Make it lighter: Use half mayo, half Greek yogurt for a healthier version.
  • Add sweetness: Swap grapes for chopped apples or dried cranberries.
  • Add crunch: Try sunflower seeds or chopped pickles for extra texture.
  • Meal prep tip: This salad lasts up to 3 days in the fridge in an airtight container.
  • Low-carb option: Serve in lettuce cups or stuffed into avocado halves.
