Ingredients
  

  • 4 cups fresh blackberries
  • 2 cups granulated sugar adjust to taste
  • 2 tablespoons fresh lemon juice
  • Optional: ½ teaspoon cinnamon 1 teaspoon vanilla extract, or 1–2 tablespoons liqueur

  • Large heavy-bottomed saucepan or pot
  • Wooden spoon or heat-resistant spatula
  • Sterilized glass jars with lids
  • Fine mesh strainer (optional for smoother preserves)

Method
 

  1. Prepare Berries: Rinse and drain blackberries, removing stems and debris.
  2. Combine Ingredients: Mix blackberries, sugar, lemon juice, and optional flavorings. Let sit 10–15 minutes.
  3. Cook: Transfer to a heavy-bottomed saucepan over medium heat. Stir frequently and bring to a gentle boil.
  4. Simmer: Reduce heat and simmer 20–30 minutes, stirring occasionally. Skim foam if necessary.
  5. Test for Doneness: Use the cold plate test—if it gels and holds its shape, it’s ready.
  6. Jar Preserves: Ladle into sterilized jars, leaving ¼ inch headspace. Seal tightly.
  7. Cool and Store: Let jars cool at room temperature. Refrigerate for up to 3 months or process in a water bath for long-term storage
