Ingredients
  

  • 4 cups vanilla ice cream store-bought or homemade
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil or vegetable oil
  • 1/2 teaspoon vanilla extract optional

  • Wooden sticks
  • Microwave-safe bowl (for melting chocolate)

Method
 

  1. Prepare the Ice Cream: Scoop the vanilla ice cream into molds or shape them into bars. Insert wooden sticks into the center of each portion.
  2. Freeze the Ice Cream: Place the ice cream on a parchment-lined baking sheet and freeze for at least 3-4 hours, or until firm.
  3. Make the Chocolate Coating: Melt the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth. Stir in vanilla extract if desired.
  4. Dip the Ice Cream: Dip each frozen ice cream bar into the melted chocolate, ensuring it’s fully coated. For a thicker layer, repeat the dipping process and freeze in between.
  5. Freeze Again: Return the coated ice cream bars to the parchment-lined tray and freeze for at least 30 minutes or until the chocolate is hardened.
  6. Serve and Enjoy: Once the chocolate is set, enjoy your Homemade Eskimo Pies right away or store them in the freezer for later.
