  • 4 cups cornflakes
  • 90 g ¼ cup + 2 tbsp unsalted butter
  • 1 tablespoon honey
  • 2 tablespoons white granulated sugar
  • Optional
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Sprinkles for decoration
  • Melted chocolate for drizzling

Method
 

  1. Preheat the oven to 300°F (150°C) and line a muffin tin with paper cupcake liners.
  2. In a medium saucepan, melt the butter, honey, and sugar over low heat, stirring until smooth.
  3. Place the cornflakes in a large bowl.
  4. Pour the warm honey mixture over the cornflakes.
  5. Gently fold until all the cornflakes are evenly coated.
  6. Spoon the mixture evenly into the prepared cupcake liners.
  7. Bake for 8–10 minutes, or until lightly golden.
  8. Remove from the oven and allow the Honey Joys to cool completely before serving.
