Method
- Preheat the oven to 300°F (150°C) and line a muffin tin with paper cupcake liners.
- In a medium saucepan, melt the butter, honey, and sugar over low heat, stirring until smooth.
- Place the cornflakes in a large bowl.
- Pour the warm honey mixture over the cornflakes.
- Gently fold until all the cornflakes are evenly coated.
- Spoon the mixture evenly into the prepared cupcake liners.
- Bake for 8–10 minutes, or until lightly golden.
- Remove from the oven and allow the Honey Joys to cool completely before serving.
