  • 2 Kokanee salmon fillets 6 oz each
  • Juice of 1 orange
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Prepare the Marinade: In a mixing bowl, combine the juice of 1 orange and 1 lime, 1 tablespoon olive oil, chopped cilantro, and chopped parsley. Season with salt and pepper to taste.
  2. Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over the top. Let it marinate in the fridge for 15-20 minutes.
  3. Preheat the Grill or Oven: If using a grill, preheat it to medium-high heat (375°F). If using an oven, preheat to 375°F.
  4. Cook the Salmon: Grill or bake the salmon for 10-12 minutes, or until it flakes easily with a fork. If grilling, brush with more marinade halfway through.
  5. Serve: Plate the salmon and garnish with extra fresh herbs if desired. Serve with your favorite side dish.
