Ingredients
  

  • 2 cooked chicken breasts grilled or baked
  • 1 ripe avocado diced
  • 1 small cucumber chopped
  • 1/4 cup red onion thinly sliced
  • Fresh cilantro chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

  • Knife and cutting board
  • Mixing bowl
  • Spoon or tongs for mixing

Method
 

  1. Cube the cooked chicken and add it to a large mixing bowl.
  2. Add diced avocado, chopped cucumber, red onion, and fresh cilantro to the bowl.
  3. Drizzle with olive oil and fresh lemon juice.
  4. Season with salt and pepper.
  5. Toss gently until everything is well combined.
  6. Serve chilled or at room temperature.
