Method
 

  1. Prepare the Pie Crust: If using a store-bought pie crust, place it in a 9-inch pie dish. If using a homemade crust, roll it out and fit it into the pie dish. Pre-bake the crust at 350°F (175°C) for 10-12 minutes, or until golden and crisp. Remove from the oven and set aside to cool.
  2. Make the Lemon Filling: In a large mixing bowl, whisk together the eggs and sugar until well combined. Add the fresh lemon juice, lemon zest, and melted butter. Stir until smooth. Gradually add the flour, salt, and baking powder, mixing until everything is incorporated. Finally, add the milk and stir until the mixture is fully combined.
  3. Assemble the Pie: Pour the lemon mixture into the prepared pie crust. Bake the pie in the preheated oven at 350°F (175°C) for 40-45 minutes. The top should be golden brown, and the center should be set but slightly soft to the touch.
