Ingredients

  • Mini Tortillas flour or corn
  • Protein Filling ground beef, chicken, pork, or beans
  • Cheese shredded cheddar, mozzarella, or a Mexican cheese blend
  • Taco Seasoning or homemade mix of cumin, paprika, garlic powder, onion powder
  • Olive Oil or Cooking Spray for crisping the shells
  • Toppings lettuce, tomatoes, salsa, guacamole, sour cream, cilantro, jalapeños, lime

Equipment

  • Air fryer
  • Skillet (for cooking protein)
  • Tongs (for flipping tacos)
  • Parchment paper or cooking spray (optional for air fryer)
  • Knife and cutting board (for prepping toppings)

Method

  1. Prepare the Filling: Cook your protein (ground beef, chicken, or pork) in a skillet, adding taco seasoning and water until fully cooked. If using beans or veggies, sauté them with taco seasoning.
  2. Prepare the Tortillas: Warm the mini tortillas in a skillet or microwave until pliable. This will help prevent cracking while folding.
  3. Shape the Tacos: Fold each tortilla into a U-shape and secure them lightly. You can use a muffin tin to hold the shape if needed.
  4. Fill the Tacos: Spoon your protein or vegetable filling into each taco shell and top with shredded cheese.
  5. Air Fry: Preheat the air fryer to 375°F (190°C). Lightly spray the tacos with olive oil or cooking spray. Place them in the air fryer basket in a single layer. Cook for 5-7 minutes, flipping halfway through, until they are golden and crispy.
  6. Serve: Once cooked, remove the tacos from the air fryer, add your favorite toppings, and serve immediately.

Notes

  • Customization: You can adjust the fillings to suit any dietary needs, such as using ground turkey, tofu, or roasted vegetables for a plant-based option.
  • Crispiness: For extra crispiness, lightly spray the inside and outside of the taco shells with oil before air frying.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 1 month. Reheat in the air fryer for the best texture.
