Ingredients
  

  • 1 whole duck 4–5 lbs, trimmed
  • 2 oranges quartered
  • 4 garlic cloves smashed
  • 1 large onion sliced
  • 2 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 cup chicken stock

Method
 

  1. Prepare the duck: Trim excess fat, rinse, and pat dry. Score the skin lightly.
  2. Season: Rub salt, pepper, and thyme all over the duck.
  3. Stuff: Place orange quarters and smashed garlic inside the cavity.
  4. Layer vegetables: Place sliced onion at the bottom of the crock pot.
  5. Cook: Place the duck on top of the onions, pour chicken stock around it. Cover and cook on low for 7 hours (or high for 4 hours).
  6. Glaze: Mix honey and soy sauce, brush over duck in the last 30 minutes of cooking.
  7. Optional finishing: For crispy skin, broil the duck for 5–10 minutes in the oven.
  8. Serve: Let the duck rest for 10 minutes before carving and serving.

Notes

  • For richer flavor, marinate the duck overnight with honey, soy, and orange juice.
  • Duck fat can be saved for roasting vegetables or making gravies.
  • Adjust cooking time based on duck size; smaller ducks or parts require less time.
  • Leftovers can be refrigerated for 3–4 days or frozen for up to 3 months.
