  • 8 grouper cheeks cleaned
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 clove garlic minced
  • 1 teaspoon fresh parsley chopped
  • 1 teaspoon fresh lemon juice
  • Lemon wedges for garnish

Method
 

  1. Pat the grouper cheeks dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add grouper cheeks to the skillet and sear for 2–3 minutes per side until golden and cooked through.
  4. Remove the cheeks from the skillet and set aside.
  5. In the same skillet, add butter and minced garlic. Cook for 1 minute until fragrant.
  6. Stir in lemon juice and parsley, then pour over the grouper cheeks.
  7. Serve immediately, garnished with lemon wedges.
