Ingredients

  • 1 box yellow cake mix or butter cake mix
  • 1 cup chopped pecans
  • 1 cup unsalted butter melted
  • 1 can 14 oz sweetened condensed milk
  • 1 cup corn syrup light or dark
  • 3 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt

Equipment

  • 9x13-inch baking dish
  • Whisk
  • Mixing bowl
  • Measuring cups and spoons
  • Butter or non-stick spray for greasing the pan
  • Oven

Method

  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
  2. Prepare the base: Pour the entire box of cake mix evenly into the prepared baking dish. Do not stir or mix; just spread it out evenly.
  3. Prepare the filling: In a separate mixing bowl, whisk together the sweetened condensed milk, corn syrup, eggs, vanilla extract, and a pinch of salt. Once combined, pour this mixture evenly over the cake mix in the baking dish.
  4. Top with pecans: Sprinkle the chopped pecans over the top of the cake mixture.
  5. Add melted butter: Drizzle the melted butter evenly over the pecans and cake mixture, covering as much of the surface as possible.
  6. Bake: Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown, and a toothpick inserted into the center comes out clean.
  7. Cool and serve: Let the cake cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream for extra indulgence!

Notes

You can use light or dark corn syrup depending on your preference. Dark corn syrup gives a slightly richer flavor.
Feel free to add a pinch of cinnamon or nutmeg for a spiced twist.
Make sure to let the cake cool slightly before serving; it will set as it cools, making it easier to slice.
This cake is best served warm, but it will keep well for a few days if stored in an airtight container at room temperature.
