Ingredients

  • 1 package of phyllo dough about 20 sheets
  • 4 tbsp melted butter or olive oil for brushing
  • Sea salt to taste
  • Optional seasonings and toppings:
  • For savory: garlic powder smoked paprika, rosemary, thyme, Parmesan cheese
  • For sweet: cinnamon sugar, honey, cocoa powder
  • Fresh herbs e.g., basil, parsley

Equipment

  • Oven
  • Baking sheet
  • Parchment paper (optional)
  • Pastry brush
  • Sharp knife or pizza cutter
  • Small bowl for melted butter or olive oil

Method

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper to prevent sticking.
  2. Prepare the Phyllo Dough: Thaw the phyllo dough according to the package instructions. Once thawed, unroll the dough and cover it with a damp cloth to prevent it from drying out.
  3. Layer and Brush the Dough: Take one sheet of phyllo dough and place it on the prepared baking sheet. Brush it evenly with a thin layer of melted butter or olive oil. Layer 3 to 4 sheets on top of each other, brushing each sheet with more butter or oil.
  4. Cut the Dough: Once you've stacked the desired number of layers, use a sharp knife or pizza cutter to cut the dough into strips or squares, depending on the size you prefer for your crisps.
  5. Season the Crisps: Sprinkle your preferred seasonings over the cut dough. For savory crisps, use garlic powder, rosemary, and a pinch of sea salt. For sweet crisps, sprinkle with cinnamon and sugar.
  6. Bake: Place the baking sheet in the oven and bake for 10-12 minutes or until the phyllo crisps are golden brown and crispy. Keep an eye on them towards the end to avoid burning.
  7. Cool and Serve: Remove the crisps from the oven and let them cool on the baking sheet. Once cooled, serve immediately or store in an airtight container for later.

Notes

  • Storage: Phyllo crisps are best eaten fresh, but they can be stored in an airtight container for up to 3 days. If they lose their crispiness, simply reheat them in the oven for a few minutes to restore their crunch.
  • Flavor Variations: Experiment with different seasoning blends! Add a little Parmesan or crumbled feta for savory flavors, or try nutmeg and vanilla for a sweeter treat.
  • Healthier Options: For a lighter, heart-healthier version, use olive oil instead of butter. You can also reduce the amount of oil for fewer calories.
  • Mini Phyllo Cups: If you want to make mini phyllo cups, cut the dough into squares and fit them into a mini muffin tin. Bake until golden and crisp, then fill with savory or sweet fillings.
