- Muddle the Mint and Lime: In a tall glass, place the fresh mint leaves and lime wedges. Use a muddler to gently crush the mint and lime, releasing the oils and juices. Be careful not to over-muddle the mint, as it can become bitter.
- Add Lavender Syrup and Rum: Pour in the lavender simple syrup and white rum over the muddled mint and lime mixture.
- Fill the Glass with Ice: Add ice cubes to the glass, filling it nearly to the top.
- Top with Club Soda: Pour club soda into the glass until it’s nearly full, giving it a slight fizz. Stir gently to combine all the ingredients.
- Garnish and Serve: Garnish with a sprig of fresh mint and a lavender sprig, if desired. Add a lime wedge or wheel on the rim for extra decoration.

- Lavender Simple Syrup: To make the syrup, combine equal parts water and sugar (e.g., 1 cup of each), heat until the sugar dissolves, and add a handful of dried lavender flowers. Let the mixture simmer for 5-10 minutes, then strain out the lavender. Let it cool before using.
- Mint Alternatives: If you prefer a different herbal note, you can experiment with adding basil or rosemary to the muddling step for a unique twist.
- Non-Alcoholic Version: For a mocktail version, simply skip the rum and top with more club soda or sparkling water for a refreshing non-alcoholic drink.
- Adjust Sweetness: You can customize the sweetness of the drink by adjusting the amount of lavender syrup. Start with 1 ounce, and increase or decrease according to your taste.
