Ingredients

  • 2 cups fresh orange juice
  • 1 cup champagne or sparkling wine
  • 4 cups sugar
  • 1 packet 1.75 oz pectin

Equipment

  • Medium saucepan
  • Measuring cups and spoons
  • Stirring Spoon
  • Cold plate for testing consistency
  • Sterilized jars for storage
  • Ladle

Method

  1. Prepare Ingredients: Measure out the orange juice, champagne, sugar, and pectin.
  2. Combine Ingredients: In a medium saucepan, combine the orange juice and champagne. Stir in the sugar and bring the mixture to a boil over medium-high heat.
  3. Add Pectin: Once the sugar has dissolved and the mixture is boiling, sprinkle in the pectin, stirring constantly to prevent clumps.
  4. Boil and Test: Continue boiling for 5-10 minutes, stirring occasionally. Test the jelly by placing a small spoonful on a cold plate. Let it cool, then run your finger through it. If it wrinkles and holds its shape, it's ready.
  5. Jar the Jelly: Once the jelly has reached the desired consistency, remove the pan from the heat. Carefully ladle the hot jelly into sterilized jars, leaving a small gap at the top.

Notes

  • Storage: The jelly can be stored in the refrigerator for up to 3 weeks. For longer storage, freeze the jelly in smaller portions.
  • Substitutes: You can use any sparkling wine in place of champagne for a slightly different flavor. If you prefer a less sweet jelly, reduce the sugar by 1/2 cup.
  • Variations: Experiment with adding a sprig of mint or rosemary during the boiling process for a subtle herbal note.
  • Serving Suggestions: This jelly is great on toast, scones, biscuits, or as a topping for cheesecake or yogurt.
