Ingredients

Focaccia dough
  • 3 cups all-purpose flour 375 g, spooned and leveled
  • 2 ¼ tsp instant yeast 1 packet
  • 1 tsp sugar
  • 1 ½ tsp fine salt
  • 1 ⅓ cups warm water 300 ml, 100 to 110°F
  • 5 tbsp olive oil divided: 2 for the dough, 2 for the pan, 1 for the top
Pizza topping
  • ¾ cup pizza sauce
  • 1 ½ cups low-moisture mozzarella about 6 oz, shredded
  • ¼ cup Parmesan cheese grated
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ cup mini pepperoni or sliced black olives optional

Equipment

  • Large mixing bowl
  • 9x13-inch metal baking pan
  • Spatula

Method

  1. Whisk the flour, yeast, sugar and salt in a large bowl. Add the warm water and 2 tbsp olive oil and stir until no dry flour remains. Cover and rest 10 minutes.
  2. With a wet hand, stretch and fold the dough over itself 4 times, turning the bowl. Rest 15 minutes and repeat once more.
  3. Cover and let rise in a warm spot for 45 to 60 minutes, until about doubled.
  4. Spread 2 tbsp olive oil in a 9x13-inch metal pan. Add the dough, turn to coat, and press it toward the corners. Cover and let rise 30 to 45 minutes until puffy. Preheat the oven to 425°F (220°C).
  5. Dimple the dough deeply with oiled fingertips, drizzle with the remaining 1 tbsp olive oil, and bake 12 minutes until set and lightly golden.
  6. Spread the sauce thinly over the top, then add the mozzarella, Parmesan, oregano, garlic powder and any optional toppings. Bake 10 to 12 minutes more, until the cheese is spotted golden and the bottom is crisp.
  7. Cool in the pan 10 minutes, then cut into 12 squares and serve warm.

Notes

  • This is an unofficial copycat; Souplantation never published its bakery recipes.
  • For an overnight dough, refrigerate after the stretch-and-folds for 12 to 24 hours, then continue from shaping.
  • Shortcut: use 1 lb store-bought pizza dough, pressed into the oiled pan, with the same two-stage bake.
  • Cheesy garlic version: skip the sauce and brush with garlic-herb butter before adding the cheese.
  • Refrigerate leftovers up to 3 days; reheat at 375°F for 6 to 8 minutes.
