Ingredients
  

  • 1 lb ground chicken or turkey
  • 1/2 cup breadcrumbs use gluten-free if necessary
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped spinach or spinach powder
  • 1/4 cup grated cheese optional
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 egg
  • Salt and pepper to taste
  • 2 tbsp olive oil if frying

Method
 

  1. Preheat your oven to 375°F (190°C) if baking. Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the ground chicken or turkey, breadcrumbs, grated carrot, spinach, grated cheese (if using), garlic powder, onion powder, egg, and a pinch of salt and pepper. Mix everything together until well combined.
  3. Using your hands or a spoon, form the mixture into small, toddler-friendly meatballs (about 1-inch in diameter).
  4. If baking, place the meatballs on the prepared baking sheet and bake for 15-20 minutes or until golden brown and cooked through.
  5. If frying, heat olive oil in a frying pan over medium heat. Cook the meatballs in batches, turning them until they are golden and cooked through, about 5-7 minutes per batch.
  6. Let the meatballs cool slightly before serving to your toddler.

Notes

  • For a smoother texture, you can finely chop the veggies or even puree them before mixing into the meatball mixture.
  • You can substitute the ground meat with beef, pork, or a plant-based alternative.
  • These meatballs freeze well! Store them in an airtight container for up to 2 months. Reheat in the oven or microwave before serving.
