Ingredients
  

  • For the base:
  • 200 g digestive biscuits crushed
  • 100 g unsalted butter melted
  • For the filling:
  • 500 g cream cheese softened
  • 150 g caster sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 200 ml sour cream
  • Optional toppings:
  • Fresh berries or fruit compote
  • Chocolate or caramel sauce

Method
 

  1. Make the base: Mix crushed biscuits with melted butter and press into the pan. Chill.
  2. Make the filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream; mix gently.
  3. Bake: Pour filling over base. Bake at 160°C (320°F) for 50–60 minutes until edges are set.
  4. Cool and chill: Let cool, then refrigerate for at least 4 hours.
  5. Serve: Top with berries or sauce, slice, and enjoy.

  • Use room temperature ingredients for smooth filling.
  • Avoid overmixing to prevent cracks.
  • Can be stored in fridge for up to 5 days or frozen for 2 months.
