Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup water more as needed
  • 1 to 1 1/2 cups fruit filling apple, peach, or cherry
  • 1 tablespoon sugar optional, for sprinkling
  • Oil for frying vegetable or canola oil works well

Equipment

  • Rolling Pin
  • Frying pan or deep fryer
  • Pastry cutter (optional)
  • Mixing bowl
  • Spoon for filling
  • Paper towels (for draining excess oil)

Method

  1. Prepare the dough: In a mixing bowl, combine the flour and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs. Slowly add water, one tablespoon at a time, until the dough forms. Be careful not to overwork the dough. Wrap it in plastic and refrigerate for about 30 minutes.
  2. Roll out the dough: On a floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter or a cup to cut dough into circles, about 4-5 inches in diameter.
  3. Add filling: Spoon a generous amount of your chosen fruit filling onto the center of each dough circle. Be careful not to overfill.
  4. Seal the pies: Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, using a fork to crimp the edges and ensure a tight seal.
  5. Fry the pies: Heat oil in a frying pan over medium heat (about 350°F or 175°C). Carefully place the pies in the hot oil, frying them in batches for about 2-3 minutes per side, or until golden brown and crispy. Remove from oil and drain on paper towels.
  6. Serve: Sprinkle with sugar, if desired, and serve warm. Enjoy your homemade Amish fried pies!

Notes

  • Fruit filling: You can use any fruit filling of your choice, whether homemade or store-bought. Popular options include apple, peach, and cherry, but you can experiment with other fruits as well.
  • Storage: These pies are best enjoyed fresh but can be stored in an airtight container for a couple of days. Reheat them in a skillet for a crispy exterior.
  • Sweetness: Adjust the sweetness of the filling to your taste. If you prefer a less sweet filling, reduce the sugar in the fruit mixture.
  • Oil temperature: Be sure the oil is hot enough before frying. If the oil is too cool, the pies may absorb too much oil and become greasy. Use a thermometer to check the temperature, or drop a small piece of dough into the oil if it sizzles immediately, the oil is ready.
