  • 200 g brown rice pasta
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1/2 cup spinach leaves
  • 1/2 onion thinly sliced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese optional
  • Fresh basil leaves for garnish optional

Method
 

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the brown rice pasta and cook according to the package instructions, usually 7-9 minutes, until tender. Drain and set aside.
  2. Prepare the Vegetables: While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the onion and garlic, cooking for 2-3 minutes until softened and fragrant.
  3. Add the Tomatoes and Spinach: Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften. Add the spinach leaves and cook for 1 more minute until wilted.
  4. Combine the Pasta and Vegetables: Add the cooked brown rice pasta to the pan with the vegetables. Toss everything together and season with salt and pepper to taste.
  5. Serve: Plate the pasta, and top with grated Parmesan cheese and fresh basil leaves for garnish, if desired. Serve immediately.
