Method
 

  1. Preheat Oven: Preheat your oven to 475°F (245°C). Line a baking sheet or cast-iron skillet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt until well combined.
  3. Cut in Fat: Grate frozen butter into the flour mix. Add shortening and mix with your fingertips until crumbly and coarse.
  4. Add Buttermilk and Honey: Make a well in the center, pour in buttermilk and honey. Stir gently until just combined. Don’t overmix the dough should be shaggy.
  5. Fold for Layers: Turn dough out onto a floured surface. Pat into a rectangle and fold into thirds. Repeat this fold twice, rotating between folds.
  6. Cut Biscuits: Roll to ¾-inch thickness. Use a 2-inch round cutter to cut biscuits without twisting. Place them close together on the baking tray.
  7. Bake: Bake for 13–14 minutes or until tops are golden brown. Brush immediately with melted butter.
  8. Serve: Cool slightly and enjoy warm with jam, butter, or gravy.
